If you like peanut butter and honey you are going to LOVE these!! They are packed with flavor and natural energy.

The cacao nibs are a great replacement for regular chocolate chips because of their health benefits.  They are rich in antioxidants and a great source of vitamin C, iron, and magnesium…. to name a few of the benefits.

Raw honey has many health benefits as well.  Here is a great article from Natural News about the powerful properties of raw honey.

Chia seeds are great to put in here if you can find them.  They can be ordered online as well.  They provide SO many health benefits including fiber, protein, omega-3s and 6s, iron, calcium, magnesium…. the list really goes on and on!

Please please please buy peanut butter that does not have hydrogenated oils in it! If you can find a jar that just has peanuts and salt as the ingredients you will be benefiting yourself so much more.

Here’s what you need:

1 cup old fashion oats

1/4 cup honey (raw if it’s available)

1/4 cup peanut butter (try to find a good kind with JUST peanuts as the ingredients)

2 tablespoons sunflower seeds (you can use other nuts if you like)

1 tablespoon chia seeds (optional)

1/2 teaspoon vanilla extract

1/4 cup cacao nibs (if you can’t find these you can either order them online, use regular chocolate chips, or omit completely)

This recipe can be doubled!

*Combine all the ingredients together until well mixed

*Flatten and shape into a large rectangle or square on a sheet of wax paper

or

*Scoop with a spoon or small cookie scoop and roll into small balls

*Refrigerate for an hour or more

*Use a large knife to cut into small square bites (if you aren’t shaping them into balls)

These need to be stored in the refrigerator as well.  If you are packing them to go somewhere then I would recommend wrapping them in wax paper. Shaping them into balls is actually the easiest! You can place them in little cupcake liners to serve.  If they are too sticky for you then roll them in unsweetened coconut to absorb the stickiness and add a little more flavor from the coconut.
