Cake for breakfast is the best way to celebrate any holiday!

I make waffles all of the time for my son!  They are easy to make ahead of time, freeze, and toast up at your convenience. This time I wanted to take it to an entirely new level. With Memorial Day this weekend, and the 4th of July around the corner, I wanted to present waffles in a way that would “wow” a crowd. This is my basic waffle recipe that I make ALL of the time. The waffles are topped with a mascarpone and maple whipped cream, then decorated it with fresh fruit. You can really use any fruit you like, but strawberries and blueberries create a nice red, white, and blue look! It is an easy way to make a big presentation!

This “cake for breakfast” can be cut exactly like a cake, into big slices. Finish it off with a drizzle of real maple syrup and you have a beautiful cake for breakfast…or dessert!

Waffle Cake with Maple Mascarpone Whipped Cream

Ingredients

  • Waffles:

  • 2 cups whole wheat flour

  • 3 teaspoons baking powder

  • 1/2 teaspoons salt

  • 1 teaspoon cinnamon

  • 3 tablespoons sugar; I like turbinado sugar

  • 2 1/2 cups whole or 2% milk; for dairy-free milk

  • 1 egg

  • 2 teaspoons vanilla

  • 6 tablespoons butter; melted and cooled

  • Whipped Cream:

  • 2 cups heavy whipping cream; very cold

  • 1/2 cup mascarpone; cold

  • 2 tablespoons maple syrup

  • 1 teaspoons vanilla

Instructions

  1. *Heat up the waffle maker

  2. *Whisk together the flour, sugar, salt, cinnamon, and baking powder in a large bowl

  3. *Slowly whisk in the milk, egg, and vanilla

  4. *Whisk in the cooled butter

  5. *If the mixture is too think you can add more milk, but this mixture is on the thicker side

  6. *Butter or oil the heated waffle maker

  7. *Pour batter into the waffle maker; amount will vary in size depending on the size of waffle maker

  8. *Cook till golden brown

  9. *If you want to make the waffle cake allow the waffles to cool completely

  10. *Make the whipped cream:

  11. *In a stand mixer with a whisk attachment (or with a hand mixer) whip the mascarpone so that it starts to become light

  12. *Slowly pour in the heavy whipping cream, vanilla, and maple syrup

  13. *Whip it until you achieve soft peaks and the whipped cream can stand up

  14. *Careful not to over-whip!

  15. *To build the cake, place one of the waffles onto a cake stand

  16. *Top with some of the whipped cream and some fruit

  17. *Repeat with each layer making sure each one has whipped cream and fruit in between

  18. *Cut it like you would a regular cake and drizzle some more maple syrup over the cut pieces for an extra touch of sweetness
