Breakfast-To-Go-Parfaits
I looooooove breakfast… and I laugh when people say they don’t have time to eat breakfast in the morning. Yes you do… do you have time to brush your teeth? Ok then… make time for breakfast. You’ll feel better throughout the day… and live longer… well… probably!
You don’t have to sit down at the table to get breakfast into your day. I find that the best options are things that are handheld and can be taken with you. I love the idea of carrying things in mason jars. It makes me feel like I’m living in the south for some reason, and they are just really cute. I thought that this is a fun, quick, and healthy breakfast to-go… granola, yogurt and fruit! You make time to go to the coffee house and get those really gross yogurt parfaits that have been sitting out for like 3 days full of yogurt that has aspartame and flavors added to it along with syrup soaked fruit and most likely soggy granola. OK soooo here’s your chance to really enjoy breakfast! Make one at home instead of buying one. These are so cute and great to hand off to kids and significant others who are also rushed in the morning.
Here’s what you need:
A mason jar (or any other container with lid)
Greek Yogurt (organic is best)
Granola (here’s my classic, chocolate, and maple recipes)
Fruit; whatever you like! I use strawberries, raspberries and blueberries
*Start out but cutting up the strawberries
*Place a layer of fruit at the bottom of the jar
*Then a layer of greek yogurt
*Top that with the granola
*Repeat until you reach the top
*Cover with the lid and you are ready to go
*These can be prepared ahead of time and stored in the refrigerator
