California Cobb With Sweet and Spicy Bacon

I was inspired to make this when I had a salad at the Bay Lake Tower Resort in Disney World that had bacon which was both sweet and spicy!  It made me want to recreate it when I got home because it was too good of an idea not to share.  Cobb salads are usually something you would think to get when you are out to eat, but they are actually easy to make at home.  They also make great leftovers.  So if you are looking for a new way to make your daily salad here it is!

Here’s what you need (serving size: one salad):

*Note* These measurements are just a starting point… add more or less of whatever you like!

1-2 cups mixed greens; chopped

1-2 tablespoons blue cheese

2 slices sweet and spicy bacon; chopped

1-2 organic hard-boiled eggs; chopped

about 8 cherry tomatoes; diced

1/2 avocado; diced

2 tablespoons Lemon Mustard and Thyme Dressing

How to make it:

*Place the mixed greens in a shallow bowl and chop

*Drizzle the dressing over the greens and toss to coat

*Add the sweet and spicy bacon, blue cheese, tomatoes, eggs, avocado in a line to make them pretty!



I like to toss everything together and try to get each ingredient in every bite! You will love this!
