Coconut, and Honey, and Chocolate, Oh My!
These little bundles of joy are something you can feel good about! This is a no-bake dessert that is easy to make and sooooo good! Sometimes you just need a weekday dessert to fulfill your sweet tooth without making you feel guilty and here it is!
Ingredients:
2 tablespoons coconut oil (as is… it doesn’t need to be melted)
1/2 cup honey
2 pinches of salt
1/4 teaspoon vanilla
1 1/2 cups unsweetened shredded coconut
3/4 cup unsweetened cocoa powder
1 heaping tablespoon
(optional)
I have made these without using my stand mixer before and it can be done…. but it is for sure an arm workout. Be prepared that this is a stiff mixture. If you have a hand-mixer that would work as well.
*Mix the coconut oil and honey until well combined.
*Add salt and vanilla
*With the mixer running add the coconut. Once mixed add the cocoa powder and chia seeds (if using)
*Make sure to scrape down the sides of the bowl as you go
*Mix until everything is well combined.
*Used a scoop or spoon to form tablespoon size rounds. Roll with your hands to make them smooth.
*Place in the refrigerator to set for 10-15 minutes. I recommend storing these in the fridge as well.
