Crostini with Peaches, Ricotta, Prosciutto, Honey and Basil
I am a sucker for crostini! I mean, who doesn’t love bread and cheese together!? It is a perfect blank canvas to add anything and everything you like. I think I got everything I possibly could in this one; crunchy bread, creamy ricotta, salty prosciutto, fruity peaches, herbaceous basil, sweet honey, and a kiss of tart lemon juice (optional for us lemon lovers). All that in just a few bites!
Crostini are really easy appetizers to have around when entertaining. You don’t have to worry about them being warm, and you can make a bunch of different kinds. For this one specifically, you could do some without the meat for vegetarians. These can also be made under the broiler in the oven, but I really love grilling the bread. There is something magical that happens when you grill bread.

Ingredients

1 large baguette
-
2-3 peaches, depending in their size; sliced thinly

about 1/2 cup ricotta, depending on how large your bread is

4oz prosciutto
-
honey for drizzling

chopped fresh basil for topping

lemon; optional to squeeze over top of the crostini
Instructions

Slice the baguette on an angle to cut about 1/2 inch slices

Drizzle both sides with olive oil

Place on a grill and grill both sides until both sides have slight grill marks

Allow to cool

Scoop some ricotta onto each slice

Top with a small piece of the prosciutto

Then top that with a slice of the peach

Drizzle with honey

Sprinkle with chopped basil

Add a squeeze of fresh lemon juice; optional
This was absolutely phenomenal. I bought some peaches from the farmers market and was wondering what to do with them. Found this recipe and it will stay a staple!
