Fancy Bunny Bark
I have said it before and I will say it again…Easter candy is the best candy! What is it about Easter candy that makes it so good? Pastels? Bunny shapes? I don’t know but it.is.so.good!
Bunny Bark is just a fun way to enjoy all of your Easter candy in one giant piece of chocolate. I like to make mine “fancy” Bunny Bark by using the “bunny” and “egg” chocolates from Ghiradelli, adding pretzels for a depth of flavor and texture, and finish it off with pink sea salt! The sea salt, like the pretzels, adds a nice balance of flavor to all of the sweetness along with a nice crunch. I love getting bites of salt with sweet desserts. The rest of the candy you add can be whatever you want! I like M&Ms and, of course, the Cadbury chocolate eggs (aka, my kryptonite).
Tips for perfect Bunny Bark:
*You can use either “candy coating chocolate” or regular bark chocolate. Do NOT use chocolate chips because they won’t set up properly. Using “bar” chocolate works if you will be serving the bark that day or the next day. I HIGHLY recommend using candy coating chocolate because it will harden the way you want and it will break into these great shapes in a way that you won’t get as nicely with the bar chocolate. Whatever you do, get the best kind you can find, it’s worth it!
*Melt your chocolate slowly. I recommend using a double boiler to melt the chocolate. If you are melting it in the microwave, be extra cautious not to burn the chocolate.
*Chop up the candy! I like this because it looks cool but also makes the Fancy Bunny Bark easier to eat.
*Let the bark set up in the fridge and store it in the refrigerator. Doing this helps with the bark’s shelf life.
Ingredients:
1 pound semi-sweet candy coating chocolate
1 pound white candy coating chocolate
Easter candies of choice!
pretzels
sea salt
sprinkles; optional
Directions:
Melt both chocolates slowly in a double boiler
Line a baking sheet with parchment paper
Pour the chocolate onto the parchment paper and use a off-set spatula to spread it around
Drizzle the white chocolate over the semi-sweet and use the off-set spatula to swirl the chocolate together to create a fun “swirled” effect
Chop up the candy as desired
Sprinkle the candy and pretzels evenly over the chocolate
Sprinkle on the sea salt to finish
Allow the chocolate bark to set up in the fridge
Break up the bark using your hands!
This can be packaged up and given as gifts or set out in a pretty bowl or platter for a party
