I am such a sucker for summer salads!

Seasonal salads are my favorite way to enjoy the fresh produce of each season. I wanted to do a change up from the classic melon and prosciutto salad by adding in some watermelon. I also love adding savory flavors into sweet flavors. Something really lovely happens when you sprinkle some salt and pepper over fruit. Top that with some sweet yet tangy balsamic, hearty olive oil, fresh basil and it’s heaven. It checks off all the flavors needed to make a salad anything but boring. 

The key to this salad is to make everything the same size so that you can get all the flavors in one bite! Use a melon baller to make the watermelon and the cantaloupe the same size as the mozzarella balls. You can buy the mozzarella balls (they are called “cherry size”) at just about any grocery store.

I made this salad for a neighborhood BBQ recently and it was a huge hit!

Ingredients

1 small cantaloupe 

1 small watermelon, or half of a large 

4-6oz prosciutto

8 oz mozzarella, I like using the small cherry size balls 

1 small bunch of basil, or as much as you like to taste

Sea salt, pepper, balsamic and olive oil to taste 

How to make Melon Salad with with Mozzarella and Prosciutto From Scratch

Use a melon baller (or cookie scoop) to scoop out the cantaloupe and watermelon. Place the fruit onto a platter. 

Place the mozzarella over the melons and top with the prosciutto. I like to roll the pieces of prosciutto so they look like little roses.

Tear the basil over the salad. 

Top the salad with sea salt, freshly cracked pepper, and a drizzle of both olive oil and balsamic.
