It is peach season!! Who else is excited!?

Peaches are definitely one of my favorite fruits and even though it’s early into the season I have been trying to eat as many as possible. I have a great peach salsa recipe that I like to put on just about anything! One of the easiest ways to eat peaches is in a salad. Not just any old salad though! Peaches are so sweet that they are so good with other flavors that balance out their sweetness. I’m sharing an idea for one of my favorite combinations and it’s so easy it’s barely a recipe!!

Peaches; yellow peaches are my favorite but you can use any kind you like.

Burrata; I love how creamy burrata is compared to regular mozzarella.

Lemony Basil Pesto; I live and die by this recipe! I use it on so many things that it’s a staple in our house.

Edible Flowers; optional, but it makes the “salad” look really special and pretty.

Flakey Sea Salt; you can use a sprinkle of kosher salt but the large flakes of the sea salt add a nice crunch that adds a great texture to the salad.

I lay these ingredients out onto a long platter or cutting board and drizzle with the pesto. If the pesto is too thick then add some olive oil to it to loosen it up enough to drizzle. Add some more olive oil if you like and a sprinkle of the sea salt.
