Even though I’ve dressed it up with a marshmallow spiderweb for Halloween, this cocktail easily carries through the entire season. Skip the web and you’ve got a gorgeous drink for Thanksgiving or any fall dinner party. The homemade pumpkin syrup adds just the right amount of richness and spice without being too sweet, pairing perfectly with the bold espresso and smooth vodka.

This part is messy but so fun—and the result is worth it!
- Place a few marshmallows in a microwave-safe bowl.
- Heat them for about 10 seconds, just until softened.
- Let the marshmallows cool slightly, then use your fingertips to stretch and pull the melted marshmallow into thin, stringy strands.
- Gently drape the strands across the top of your martini glass to form a spiderweb effect.

Ingredients
Pumpkin Espresso Martini
- 2 ounces vodka
- ½ ounce coffee liqueur, like Kahlúa
- 2 ounces freshly brewed espresso, cooled
- ½ ounce pumpkin syrup, recipe below
- Coffee beans, for garnish
- Optional garnish: marshmallow spiderweb, see below
Homemade Pumpkin Syrup
- ¼ cup pumpkin puree
- 2 teaspoons pumpkin pie spice
- ¼ cup packed brown sugar
- ¼ cup maple syrup
- 1 cup water
- ½ teaspoon vanilla extract
- Pinch salt
Instructions
- Fill a cocktail shaker with ice.
- Add vodka, coffee liqueur, espresso, and pumpkin syrup.
- Shake vigorously for about 15–20 seconds, until the mixture is well-chilled and frothy.
- Strain into a martini glass.
- Garnish with coffee beans

Homemade Pumpkin Spice Syrup
- In a small saucepan over medium-low heat, whisk together pumpkin puree and pumpkin pie spice. Cook for about 3 minutes, whisking often—it’ll form a thick paste.
- Add brown sugar, maple syrup, and water. Whisk to dissolve the sugar and combine everything smoothly.
- Bring the mixture to a gentle simmer (not a boil) and cook for 5 minutes.
- Remove from heat and stir in the vanilla extract and a pinch of salt.
- Let it cool for 10–15 minutes, then strain through a fine mesh sieve for a smoother syrup.
- Store in a sealed jar in the refrigerator for up to 1 week.
